Blueberry Buckle

A tender, buttery cake studded with fresh Lakeville blueberries and topped with a sweet cinnamon streusel that 'buckles' as it bakes. Perfect with coffee in the morning or warm with a scoop of vanilla ice cream.

    Preheat oven to 375°F. Grease a 9-inch square or round baking pan.

    Make the streusel: combine sugar, flour, and cinnamon. Cut in cold butter with a fork or fingers until crumbly. Set aside.

    In a medium bowl, whisk together flour, baking powder, and salt.

    In a large bowl, cream softened butter and sugar until light and fluffy, about 2 minutes. Beat in egg and vanilla.

    Add the flour mixture alternately with the milk, mixing just until combined — do not overmix.

    Gently fold in the blueberries. Spread batter evenly in the prepared pan.

    Sprinkle streusel evenly over the top.

    Bake 45–50 minutes, until a toothpick inserted in the center comes out clean and the top is golden.

    Cool at least 15 minutes before slicing. Serve warm or at room temperature.
