Grilled Peach, Blackberry & Arugula Pizza

Smoky grilled Lakeville peaches, juicy blackberries, peppery arugula, creamy goat cheese, and a sweet-tangy balsamic drizzle make this an unforgettable summer pizza.

Method

    Preheat a gas or charcoal grill to high heat on one side, leaving the other side unheated for indirect cooking.

    Divide the pizza dough into 4 equal pieces. Roll each piece into a thin round and brush both sides lightly with olive oil.

    Brush the peach wedges with olive oil. Grill them over the hot side for 2 to 3 minutes per side, until warmed through and marked by the grill. Set aside.

    Place the dough rounds on the unheated side of the grill. Cover and cook for about 2 minutes, then flip and cook the second side until golden with light char marks.

    Top each grilled crust with arugula, a light drizzle of olive oil, salt, and black pepper.

    Add the grilled peach wedges, fresh blackberries, and crumbled goat cheese. Finish with balsamic glaze.
