New York-Style Peach Crumb Cake

A love letter to the deli crumb cake, made summery with peach preserves. Buttery vanilla cake, a tall cinnamon streusel, and a little egg-white trick that keeps the crumbs from going everywhere.

    Preheat oven to 350°F. Grease a 9x9-inch pan with spray or butter and set aside.

    Make the streusel: whisk together the flour, granulated sugar, brown sugar, cinnamon, and salt. Rub in the butter with your fingers until the mixture looks like wet sand. Set aside.

    Make the cake: cream the butter, granulated sugar, baking powder, and salt until light, about 3 minutes. Beat in 3 eggs plus 1 egg yolk one at a time, reserving the egg white. Mix in the vanilla, then add the flour and mix until just combined with no dry pockets.

    Spread the batter evenly in the prepared pan and tap it on the counter a few times to release air bubbles.

    Whisk the reserved egg white into the peach preserves and spread it in a thin, even layer over the batter.

    Scatter the streusel over every inch of the batter, gently pressing it so it sticks. Bake 30–33 minutes, until a toothpick inserted in the center comes out clean.

    Cool at least 15 minutes. Dust with powdered sugar if you like, then slice and serve.
